Vegetables:
Cabbage Family
- Collards (brassica oleracea)
- large, spoon shaped, smooth leaves stem grows 36 inches; roots run around plant so mulching is necessary.
- deeply ruffled sturdy leaves
- Kale
- Stem grows 24 inches; roots run around plant so mulching is necessary.
- surviving temp less than 10 degrees Fahrenheit
- Allies: Chamomile and garlic improve growth and flavor. Companions: Beet, celery, chard, cucumber, lettuce, onion, potato, spinach.
- Bok Choy
- Mache and Claytonia
- Swiss Chard: Beta Vulgaris
- bright lights chard- beautiful multicolored stems
- Plant the seeds ½ to ¾ of inch deep in well-drained, rich, light soil.
- grows to be more than 12 inches tall.
- Plant chard seeds 2 to 3 weeks before the last spring frost date.
- Peas:
- Shelling/ snap peas grow best in winter
- plant seed inch or 2 in dirt

- Allies/ companions:
- Companions: Bean, carrot, corn, cucumber, radish, turnip. Allies: Chives deter aphids. Mint improves health and flavor. Enemies: Garlic and onion stunt the growth of peas.

- edible flower, rapid growth, no fertilizers
- Seeds indoors 4 to 6 weeks before the last spring frost
- Half inch deep, 10 inches apart should appear in a week.

- 9-12 inches spread, 6-9 inches tall
- water regularly, all-purpose fertilizer
